Say, you have several plans and each of them has 2 weeks trial period. A user may select one of the plans, user those 2 weeks, then switch to another plan - use those 2 weeks and so on. I need to watch if the user already spent his/her trial period and it may be not easy, so, I wonder if Stripe itself has some mechanics not allowing to use another trial period. Or do you use some other approach?

Track one date per user - when it started a trial period. If current date minus that date is greater than two weeks, do not authorise action. Also, if they switch plans you can check if trial period has been previously started. Plus, you can notify user how long it has left in the trial.
