Roll back Android version

Hello, I have some original Google pixel XL that have updated, would like to take back to Android 7 Nougat actually. Anyone know how to do this. Also is there a way to completely stop the notification to finish installing 10, a friend accidently updated 2 of my phone's. Don't want it to happen again. Thx for any help 😊
