How much of an MVP should I build and how to market?

I'm a software engineer of 3 years looking to build a web application that allows restaurants setup menu items and for customers to order while at the restaurant to reduce the need for a lot of servers.

I wanted to ask about building the MVP. Given that my target audience are SMB restaurant owners, what is the best way to validate this idea? I can't just build a landing page. Would I have to build out a fully fledged demo and then reach out to restaurants to ask them what they think of the concept?

    I would personally approach the SMB restaurants with the idea and maybe a drawing of how it would work/look. As this is something that would be known immediately of this is a pain point or not the idea should be sufficient.

    As some maybe change adverse I would think about the question "How would we use this and still keep the human or personable approach?"

      What is the pitch to reach out here? Cold emailing? What can I offer to them that is of value at this point?

        This would be more Market Research to understand how they see the problem and also how they currently work around this issue. E.g. having more servers on standby for busy periods or only take reservations to make sure they never have more servers than required.

      More of the smaller restaurants in NYC probably.
