How to create a payment platform like stripe.

I really don't want to sound too negative but if you have to ask this kind of question you're clearly not ready to take on something like this.

It's a massive undertaking that involves a lot of compliance work, deep connections in the industry and skillful negotiation. That's just the "soft skills" needed. To build the backend tech able to process and tokenize credit cards in a PCI compliant secure manner will take a skilled software engineer a very long time.

I'm all for "thinking big" but maybe this one is too big for an Indie Hacker?

As someone who looked into this extensively for like 2 years, its quite difficult and normally requires a ton of connections, partners and insider knowledge. The reason we wanted to do it was down to the fact our marketplaces trade in high risk items and most payment gateways refuse it due to underwriting.

The founders of stripe spent nearly two years working on building the tech and negotiating with banks before they could get started, and that was before everyone and their cousin was trying to strike it rich.

It's likely that their won't be another stripe, what their will be is the next category redefining payment processor, and unfortunately, there's no book written on the things that don't exist yet, you'll have to write that one.
