Should I sell marketplace app as SAaS

As a developer people keep asking me to join their new idea which is another marketplace for X (grocery, electronics...)

I already build 2 marketplace apps back in time.

Now I'm thinking that maybe I can sell this as a service. The only question in my mind is these new wannabe entrepreneurs would buy it or not?

Should I do it and if I should in which way like a SAaS or a software house?
