What are the tools/ways you use to conduct coding interviews for Sr. Software Engineers?
Do you prefer using riddles/whiteboards or near-production environments (with frameworks/libraries/utils) during your technical interviews?

You can go through all the standard interview items you've mentioned, but frankly the best test, is the person actually doing real work related to your business.
You can hire people that seem like rockstars, but then somehow will be terrible at actually doing the job.
Not sure what your work context is like, but if it is a freelancer/contractor - get them to build a small deliverable (and pay for it obviously), you'll get a very good feel for how it's like working with them and their level of quality.
