I don't know what to do after building up landing page
I am trying to validate the idea.
Think about who your target market is and where they spend their time, then figure out ways to talk to these people & get your product in front of them.

convert as in ? coz i am trying to develop an app so if people are subscribing to it through their email that count as conversion ?
Yes. If the goal of your leading page is to get potential users email, every email you get is a conversion.
The number of email is a good metrics to see if your idea is good

Well, it depends. There is not absolut good number. You should compare the number of people who have visited your landing page with the number of email you got.
If you have more than, let say, 20%, it means that your app is interesting
