Ask IH: How do I organize market research?

Currently, I am doing market research for a conference management platform. I have a few clients already and I keep sending a ton of questions to them via Messenger. I keep adding more and more questions. What is a better way of asking a large amount of questions to clients and keeping track of them? Any ideas? I thought about email but I'm afraid that those will get lost quicky.
