We're experimenting with showcasing our product in a more dynamic and visual way by using GIF's - but we are concerned there maybe "too much" gifs on the landing page.
There are too many things happening at the same time. The design should lead the visitor logically through to where you want them to go --that is to the sign up button.
When it comes to your website once does not know where to look first.
Yes too many. The ones where the screenshots just move don't add any value.
If you show interaction, use gifs. If you are just moving it around, don't.

Besides the size increase mentioned. I don't think you need them. They get me distracted from the important stuff: your content.
Also, when I'm halfway the page and have two of them on-screen on my 2017 MBP I notice how one slides left, the other one right. It makes me a little dizzy.
My suggestion: only load and animate them if someone hovers over them and indicate that they are GIFS. If someone really is interested they might view the animation.
I'd leave the one for your video on top as is and my suggestion for the others.
Off-topic: I'm a film noob going to vlog (have gimbal, mic etc) and all the tips I've learned and been trying to apply is:
don't film against the light (like the windows behind you)
use the natural light as it shines on you (sideways or from the front for instance)
Buy a Lavalier mic (as cheap as $20) and get better audio for your video instantly.
Just my $0.02, hope it helps

40MBs of gif! I don't mind them, my internet connection is fast. Gives a nice feel of the app before even trying it. They are a little pixelated though. I'm sure better compression should be possible.
Personally, given the amount of work you have put in the app, I'd do a little more and go with good quality images that loads first, wait for the gif to load completely, and only then start playing the gifs. Loading them on fast 3g, they lag a lot, and are also pixelated. You might even stop loading if you detect slow connection for mobile users out there.
