I'm struggling with launching more side projects as I can't find the appropriate structure to start capturing payments and would like to avoid mixing with my existing (bigger) side projects.
What would be the leanest way to get things started?

If you have a bunch of revenue, create a sole proprietorship entity which will help you get business accounts for banks, payment providers and more. Stripe lets you create distinct accounts for each of your projects, so if possible use that.
As things grow, consider creating one LLC for all your projects, or a LLC for each project that is growing well and able to stand on it's own.

Me neither. I'm from Switzerland. Founding a sole proprietorship company had me download a form, visit my local authority and drop it off at the post. A week later I had founded my company. I'd expect it to be the same for other countries.
If your country makes it extremely difficult, look into the Estonian e-Residency program. For most uses it's better to incorporate in your own country though.
