Accessible Inline Edit Elements Examples?

Quick question: does anyone have best practice #UX examples for inline edit elements that behave well with pointer devices (mouses) as well as on touch screens (tablets)?

I’m talking about number fields, date fields, dropdowns that should “appear” when focused/hovered over but also communicate that they’re editable and work on touch devices.
