I finally got my M1/16GB MacBook Pro yesterday and decided to test it in Sketch against my previous laptop a Quad Core i7 with 16GB of ram (15" from 2016).
I was actually able to duplicate the entire book FOUR times giving me a single Sketch page with 1800 artboards on it that I could still move, pan and zoom with practically no lag.
This is going to be a huge leap in design performance.
Recorded a quick video on how I tested it:

Yes, the Apple M1 MacBook Pro with an i7 processor and 4K https://globaltimeusa.com/imac-pro-i7-4k/ display is a great option for designers who need to work with large numbers of artboards, as it provides a powerful and efficient performance that can handle such tasks with ease. Additionally, the high-resolution display will provide excellent clarity and color accuracy for working on visual projects.
