My goal is to build a SaaS CRM for a few clients in the podcast niche.
I love using softr.io that is super fast and easy to build web apps and prototype, but for CRMs I'm not sure if it's possible to use softr.io or if there's a more suitable platform for the job?

Great use case. I would like to refer to an open-source low code tool https://appsmith.com which is built keeping use cases like yours as the target problems. They have a cloud version and also you can self-host this.
Features like user role management, ACL, Authentication are provided out of the box here and you do not have to worry about any infrastructure as well. You can easily connect any number of data sources (databases SQL & no NoSQL) and APIs to your UI as well.

Agree with Jesus - CRM are complicated - using from existing options is generally the best bet.
But if you must create a custom one - you'll be better off developing with Wappler.
You can self host your DB (manage visually via basedash.com if Wappler's built in DB manager is not to your liking).
All other no-code tools will lock your data in with the platform - not the best situation to be in when you scale.

If you don't need something super custom, there are a lot of great CRM's out there, like pipedrive, hubspot, etc.
