I don't want to take a high risk by making a completely new saas app.
Can I just copy every functionality, UI, etc and provide them with a better cost?
I want to make many Shopify apps like at least 6 and then release them at a better cost... Is this a good strategy to go for?

Yes, but you probably won't find success if you focus on the cost. Germany's most famous startup incubator, Rocket Internet, is specialized in copycats and it works damn well for them.
You should look at what they've done and how they did it to have insights on this kind of business model.
You won't find success by just copying. You have to have some experience and connection to the product you are making. You need to also have your own vision. Otherwise you are always playing catch up.

I think an existing SaaS can be a starting point for proving there is a market, but do your own research. Just blind copying probably wont work because what you can't see is their overall strategy to get to where they are, just the veneer of the landing page and product features.
maybe you can, you need to be much stronger with product differentiation and marketing and why users would switch to new platform rather than an established one.

You can try reselling an existing saas app (you need to market it and provide support) that allows whitelabelling. If it works then build a clone application to increase profits.

I don't see what producing these apps in parallel gets you. Make one app and see if it makes money and then you can make more based on that.
