We just launched our landing page (https://nocodeletters.com) and have people looking at is as well as some sign ups. We send an email post that asking people to book an onboarding call with us.
Can someone help us understand what we can do better for people to start booking more demos?
What is the value they are getting in booking an onboarding call?

Okay, I think that is the issue. You can give early access through a sign up and then request feedback. You can also create a 5 minute demo video.
An onboarding call, sounds like a sales pitch.

Why do you need people to book an onboarding call? Here's some answers I can think of off the top of my head.
You want to show people how it works: Your whole thing is efficiency, ease, and saving time. I'd personally want a video explainer instead. No sense in booking time on my calendar for something I can watch at 2x speed.
You want to ask people's opinion on stuff: Make that clear in your request. The indie community is pretty willing to help.
