What are people using to create great product documentation?

One thing I love is the documentation provided by Firebase, Angular, Stripe, Mailchimp etc.

What have people been using to create their own forms of documentation for their public products?

Are there tools out there or have people been creating their own sites to cater for docs and how to guides.

Is your product API based and hence you're looking for "code" friendly solution ?
Or are you looking for more of "Help Center" or Knowledge base?
