I have a SaaS aimed at companies and it's soon time to launch it. That's why I need to choose a pricing plan for my customers. Should I charge per user or have fixed plans with a maximum number of users?
Advantages/Disadvantages with each option?
From my experience, small companies prefer charge-per-user and big companies prefer fixed plans. I guess it depends which kind of companies you're aiming for.
I will mostly focus on small companies but it can also be really useful for larger companies.

I think it all depends on the value that your product provides.

I concur with the Stripe Atlas articles. They taught me everything I know. After reading the articles, I went from one plan which I priced at $30/month or $40/year to 3 plans: $49/month, $99/month, and $249/month. The year plan is now the same price with one month free.
The biggest take-away I found was about pathological customers, and how higher prices can be good for your business because it attracts higher quality customers.
Also, that some people want to pay more just to distinguish themselves from other customers.
It's still a theory for me though, I'm planning to launch schuwing.com mid to late 2018.
