I think the whole EEAT signals thing is a bit over-blown. Especially after John Mueller confirmed that they are looking deeper at credentials than just "does this person have a twitter account"... If you can't add EEAT to your site without hiring experts than it is best to focus on quality content that is directly relevant to your userbase.
