Ask IH: Which industries regularly parse text to extract data?

I have been working with parsing Covid19 cases data from government bulletins for a while now.

I am wondering if there are other industries where people regularly read reports (or just pages of text) and extract data.

One example that comes to my mind is financial analysts who read SEC filings.
