auth/login options needed for MVPs?
Is it sufficient to have simple email/password for an MVP? Or is google sign-in table stakes now? In my case for a SaaS web app.

I think it depends on your niche. Social login could easily break the initial barrier in some cases but, for instance, indie hackers or tech people may be wary about privacy or giving up information like that.
Personally, I run away from social login.
