Not full stack (sorry for not properly answering your question), but in case anyone is interested in frontend only, Wes Bos (https://wesbos.com/courses/) is really good at teaching React.

Something about his videos just makes them much easier to follow than other introductory material.

Slight disclaimer, I purchased and ran through some of his courses quite a while ago. I'm not sure if they have kept up with changes/how they handle things like hooks).

I would also love to learn about a good postgres + node course if anyone knows one.

      +1 for Wes Bos.
He has an advanced react course that sets up a graphql backend and node backend with a react frontend to create an e-commerce store from scracth.
Depending on your experience it might be worth it.

You can check out the full stack training here: https://www.sevenmentor.com/full-stack-training-institute-in-pune.php
Apart from the basics of the full stack development, viz. HTML, CSS, JQuery, Bootstrap, and Ajax, it offers Angular, Node.js, and MongoDB.
This can be a great starting point for you. I hope this answer helps you. My best regards to you.
