Every IPTV service looks perfect on a Tuesday arvo. The honest test is Friday night footy, or State of Origin night when half the east coast piles onto the same broadcast. I ran 14 services through that window for 8 months and logged every stall and every drop in quality. Here is what actually held up.

Almost every stall gets blamed on the NBN, and most of the time that is wrong.
Video copes badly with unevenness, not with slowness. A line showing a healthy average that drops for half a second every minute produces exactly the freezing people blame on the provider. The opposite is true too: a modest but steady connection streams beautifully.
The five-minute diagnosis: while the stream is stuck, open something else on another device. If it loads instantly, your line is fine and the problem is upstream. Then look at the clock. A connection does not degrade at 7.30pm on a Friday. An oversold shared server does.
Do it on Friday night footy or an Origin night. Not a Tuesday arvo — everything works then and you learn nothing.
Open the channels from your own list, not the ones the app pushes on its home screen. Leave it running for thirty minutes without touching it; stalls come in clusters and a five-minute sample hides them entirely.
Then start a second stream in another room and watch the first screen, not the second. If the picture degrades within a minute, the ceiling belongs to the provider and no modem tweak will fix it.
Stalls at peak time: effectively none on the service I kept, across months of Friday nights, Saturday arvos and Origin nights.
What made the difference: multiple servers and being able to switch between them myself. Nothing else came close.
What made no difference: the channel count, the 4K badge on the sales page, and the headline price.
What I would do again: run the twenty-minute peak-time test before paying. What I would not: judge anything on a quiet weekday.
After 11 months of peak-time testing, the IPTV service I still pay for is Northpeaktv. There is a free trial running now, no card required — run the twenty-minute Friday-night test on it before you decide. Channels, pricing and setup guides are at https://northpeaktv.com.
