I want to add subscriptions to my SaaS, and couldn't find a good payment gateway to do so.
Stripe doesn't works in India ( from this I meant that I'll need to get payment in rupees from everyone )
Paddle is good enough, but I get stuck sometimes and the support takes years to answer.

Well first of all you should decide what you want, a payment gateway or a merchant of record.
Payment gateway have a look at Stripe. I would recommend staying away from PayPal.
For merchant of record, Paddle or FastSpring.

I am from a Stripe unsupported country but that didn't stopped me from going with Stripe. I incorporated my business in the UK with Incorpuk (https://incorpuk.com) and I was able to create my own Stripe account for my customer service SaaS platform all within a week.
If you really want to go with Stripe, you should even if Stripe is not supported in your country.

I think it is difficult to use only one for all countries because not all of them work in all countries, the best thing would be a mixture of several and, depending on the country of the client, use an appropriate payment gateway. You can use MercadoPago (Latam) and Stripe for the rest of the countries, there is also dLocal that adapts to emerging countries but I don't know how easy it is to implement.
Indie Hackers often worry about tax compliance with a payment gateway like Stripe but in reality, you don't need to worry about tax until much later in your journey (note, I am not a tax advisor). Most jurisdictions have generous thresholds before you actually need to file taxes.

I use Paddle (switched away from Gumroad) and like it, their support is indeed pretty slow, but I rarely encountered any issues with them. Most often I contact them regarding feature requests.
Why did you switch away from Gumroad? I am curious because I was to try Gumroad as payment gateway.
I wrote more details in a comment a while ago, but it was mostly technical: no option to have VAT-inclusive pricing, no option to have custom subscriptions or trials, or change existing subscriptions. Can't remember exactly all the reasons.

I would start with Paddle, and then incorporate with Stripe Atlas and use Stripe?
Paddle is perfect for small SaaS, but didn't know that had slow support.

I am using fastspring.com. It is not ideal, but I don't find anything better for this.

Yep but I guess it is on our part. Like we need to have a GST account for exporting Goods and services else we need to ask money in rupees.
