Best Stack For Making This Type Of Mobile App

Hi!
I have an idea for a mobile app but I'm not sure what stack I should learn for making this app, I've read about all the available technologies for mobile app development in native as well as in hybrid and I'm inclined to choose Ionic/Firebase because of my background and since I've read that it is the quickest option to get the job done, but I have concerns regarding the performance of the app so I thought I'd ask the community for help to guide me to the right path.
Basically the app I want to create will have an editor for writing text, applying filter to images and will be talking to REST APIs (something like Evernote) and won't need any access to native components, so what is the optimal option that you think will be the best?

P.S: What is the stack used to create Evernote app?
