As the title suggests, I'm trying to build a portfolio. I have a Semrush Pro subscription and am willing to audit websites, do a keyword gap analysis, backlink gap analysis, or whatever you need.

Speaking from experience in doing SEO professionally for 5+ years in a mix of freelance and consulting, one of the easiest things you can do is to build a website yourself.
You might get some work here, but posting on forums can feel like shouting into the void.
Find a niche, build a website, learn SEO through that, and build a case study from it.
Practice SEO to get in front of your target audience, and learn as you go. Or pull from your own network, if you know anyone who has a blog/website/business ask them if you can help them for free to gain experience.
