I'm planning to use Gumroad to sell information products such as ebooks, guides, and other digital content covering topics in technology and science. Under Profile > Community in Gumroad, what's the most appropriate choice for my products? Books & Writing or Design & Tech Products? Something else?
Does this choice affect discoverability on the platform? Can I change the Community later?

Design & Tech Productsand see what happens.You can easily change this later - it does seem to impact the Gumroad recommendation engine, but it's not the only factor. I would make the selection based on the most focused matches rather than the widest reach.
Books and writing is a HUGE category, so your relevance is likely to be lower. I would try Design and Tech Products and consider playing with it later.
I only have anecdata of one business that I advise that is in the top 5% of Gumroad sellers, their recommendation engine can be a pretty powerful channel (something between 8-10% of this businesses monthly sales come from recommendations on other products, which continues to be surprising to us), but it's also not at all in your control and it's a black box about how it actually works.
My understanding is that it works best to boost products that are already making sales and getting ratings, vs pushing brand new and relatively undiscovered products to the wider gumroad audience.
I sell an ebook in "books and writing" because I think you're best served by describing the format of the product not the subject. That said, it's not hugely important and I think is by product not by profile.
Also, Gumroad isn't really a discovery platform, you need to drive your own sales.
