Don’t continue to waste your attention on choosing a stack for the project where it doesn’t matter. The more comfortable you are with these technologies, the better it will be for the project. Build in your way, not in someone else’s.

I believe each project has its dependencies and requires the tech stack to be different. If we as developers get stuck only developing in languages we are comfortable in, it would probably cost us in the long run.
I would say research on the tech stack that would produce the most perfect outcome that you want, like for UpEmbed, we chose a completely different tech stack from what my co-founder or I was "comfortable" with. But we had to go with it as it was the best fit for our product needs.
Also, I guess an added benefit is developing expertise in languages we are uncomfortable with.
