I am the idea guy and sole bootstrapper for the project. I also do the UI/UX and hire a coder to do the dev? Does that disqualifies my start-up as a One-Person?

Nope, that's my opinion
I did everything myself and realized I'm the bottleneck and can't do everything myself, at least not well, since I only have 24 hours a day, like everyone else
So started using freelancers for various tasks
(with varying degrees of success)
