I am initially targeting early-stage startups and founders who can't afford a full-time UX design team but want to delight their early users and solve the right problems for them sooner. I am wondering if £2k per month is still too steep for this persona. Personally, I feel as though the price is justified when you consider:

Tough call I think - I am a dev and understand your reasoning for the costs but you have to look at it from a clients point of view and smaller companies will find that a hurdle.
I would have concerns if I was a client on the fact that it looks very much like you are offering yourself as the designer - you need to be able to convince someone that if you have 10 or 20 clients on your books then when they ask for some designs then you will still be able to complete the order in the timeframe they are wanting- it is not clear on the site how you would cope with that especially on your own.
I have had a software development company before and I had a retainer for a few clients which was very good for us . My concern for you is that on the site you have put unlimited which is never possible unless you are Doc Brown and get in the DeLorean.
The retained clients I had gradually started to take advantage of the situation and we found our friendly agreement on a retainer to further the software became more intense and we were expected to work more and more - then the relationships break down because as soon as you say no they take their toys home - better to be up front on the expectations and put some limits that gives them better value than hiring a freelancer.
I would consider rather than a monthly retainer (which they may or may not use) maybe for a set fee of £2000 give them x number of designs or x hours in the bank etc and you could then spread the load out over a few months then if you know you are getting to the limit of your workload you can adjust things- its just a suggestion.
Or maybe have say 5 of these £2k packages available at ay one time and once they are all used up then no more subscriptions can be created until one of your existing clients pauses theirs. So new clients will have to be put in a queue. If you find you are having to turn away work then it time to hire someone - that may or may not work.

As for number of clients, I agree, I wouldn’t be able to have more than 5, and at this moment I am aiming for a maximum of 3 due to wanting to provide a good quality service for all. However, based on your comments I think I probably don’t articulate that well enough on the site yet.
In terms of the unlimited work, clients can queue as many requests as they like but only one will be worked on at a time, as capacity becomes available. Again, I could probably explain that better on the site so thanks for flagging it!

I’ve also been considering a lighter-touch package aimed at indie founders/companies where the cost is significantly reduced and the services are more focused around understanding target users, reviewing their existing designs/product and sharing feedback on how they could improve. Do you have any thoughts on that?
That sounds good - hook them in early and they should keep using you in the future.
