Good business use-cases for document AI

I need help brainstorming ideas around use-cases where document information extraction could be super valuable. I do have some technical expertise around this area and planning to use that to solve a business problem. My lack of domain knowledge in a particular business vertical is being a blocker to take this to the next step. Would love to brainstorm with fellow Indiehackers and discuss what are some good use-cases that require document processing on a large scale
