I'm currently learning about different growth strategy and influencer marketing seems to be a promising channel in 2021. Has anyone found success with this? If so, what was your strategy for finding the right influencers to partner with?

I think it hardly depends on your product. But I think especially with smaller to medium accounts it can be a great option to aim for. Would be really interesting to see your results if you try it :-)
Another way to look at this, consider doing some referral marketing.
Ask your existing customers if they'd recommend you to potential new customers. Often your best customers know other users who would be good customers.
The first step here is sending an email blast to your existing customers asking for referrals. It's simple and will keep your company top of mind.
The advanced step here is building an affiliate/referral program.
It really depends on the product and the target audience. I will be starting my product's (lofi.co) marketing campaign this week, and it will be 90% influencer marketing, because the target is mainly students and the product itself allows influencers to create potentially viral content easily. I'll be posting the results in about a month, hopefully.
I think I remember @_joshuafonseca didn't have success with YouTube influencers initially, but tried a few things. Maybe it's worth trying to ask him :)
Yes, but it depends on what you want to promote. It works better for physical products or Gen Z targeted digital products.
I used to run Shopify dropshipping store and was getting good sales promoting on IG swipe ups. I had to close it when pandemic started due to late delivery.
