How can I run display ads that respect page speed & user privacy?

I've got a content site that's getting fairly popular (> 2M monthly page views), and I'm interested in monetizing through display ads. We've put a lot of effort into maintaining a high quality bar on the site -- fast page speed; no tracking cookies/gdpr banner; clear content presentation. I know that if we want to use display ads we'll have to compromise on those to some extent, but I'm having a hard time finding any ad platform that I'm comfortable integrating. Most seem to add hundreds of network requests to each page view, transferring enormous amounts of data, and setting cookies on many domains.

All the ad platforms seem to be trying to sell me on how many $ they can squeeze out of my users with their proprietary bidding/tracking technology 🙄. I just want ads that are relevant to the category (cycling), have minimal impact on page speed, and aren't totally obnoxious to users.

Does such a thing exist, or do I need to roll my own and manage ad sales directly? I'm a developer, and pretty new to the whole marketing/advertising end of things, so any pointers around navigating this would be appreciated.
