How do you deal with legal documents?

How do you deal with creating and maintaining terms-of-use, privacy-policy, cookie-consent, fair-use-policy, and any other legal documents/flows?

Here's what I did/looked at so far:

With previous projects I've manually crafted the legal documents, started from an open source and modified it to suit my needs.
At some point I've purchase Iubenda lifetime deal on AppSumo. Now I wanted to use it for typefully.io, and found that it's not covering everything that I need. So annoyingly it was a waste of money.

Looking for other solutions, I've found:

Axeptio - they have a very friendly cookie-consent product. They are focused on that only and seem to be really innovative. For example, they provide contextual-consent that pops-up when the user wants to interact with some 3rd party tool such as form, chat, video, etc. They also have a free tier up to 150k visits and 2 cookies. In terms of number of visits this is more than enough. I wonder if 2 cookies is ever enough for anyone. The free tier also doesn't include consent-storage. I guess this is kind of mandatory if you want to be covered if you ever find yourself in court. Isn't it? Next tier is 15 Euro / month
Quantcast offers a free cookie-consent generator. Looks nice, haven't tested it too deeply though.
GetTerms offers terms, cookie-policy and acceptable-use policy with "GDPR and CCPA ready", for one-time payment of $49. If you wander around their website long enough you'll get a $10-off coupon. You can use this link if you want instead (I'm not affiliated and I don't promise that it'll work)
WebSitePolicies offers premium packages for commercial use for one-time payment of $29.95-$59.95. They also have a free tier for personal use. Even though this is a one-time payment, the documents will update as regulations change, and they'll even host it for you if you want. They have a simple cookie-consent banner generator as well which looks non-intrusive and they claim it to be compliant with regulations.

I'm thinking to go with WebSitePolicies since it seems to be the most comprehensive while still being one-time payment.
I'd be happy to hear how others are dealing with this?
