How do you handle updates in recurring Stripe reports?

Recurring Stripe reporting has a data-maintenance problem that is easy to miss in a one-off export.

An invoice can be updated. A subscription can change plan. A customer may need an internal label. A payout may need to be matched back to payments. Meanwhile, formulas and notes in the reporting layer still need to remain intact.

How do you handle updates to existing Stripe records in recurring reports? Do you use Sheets, a BI tool, a database, custom code, or something else?
