I find myself working on multiple projects all with their own domain. I have a G Suite account for my consulting company but I definitely don't need all these features for every side project and would love to avoid to multiply the fees.
What's your strategy for managing emails on multiple domains? Do you create multiple emails accounts and manage all of them in the same client, is there an email provider that accepts multiple domains or maybe another solution that I haven't discovered yet?

Get a hosting agency account at a good web hosting company. There you can make and control as many domains and thus email addresses as you want for 1 fixed cost per month.

If cost per mailbox is a consideration you may use a cheap email provider such as Private Email by Namecheap. I use their basic plan for one domain and the first mailbox is around $8/year, each additional one about $4/year.
You can easily configure Gmail in a single personal Google account or a G Suite account to send and receive mail from your domain.
