How do you set up a new board on trello or similar for a project ?

Typical sprint-style. One long list on the left is my "project backlog" of everything I can think of that I need to be in place for my MVP.
Three lists in the middle to represent my current week's work: not started, in progress, complete. I don't bother sizing tasks, but it gives me a visual feel of day-to-day progress. Also, it encourages me not to have too many tasks "in-progress" as that tells me that I'm starting things without proper completion i.e. testing, which I find leads to real delay long term.
At the end of each week I move the completed list to the right and start a new sprint backlog.
That's how I work it, if you search for sprint or kanban boards you'll find several templates, I just set it up from scratch.
