Taking notes efficiently is a common dilemma, and your consideration of different methods is great!
Just try to do it consistently and you will get better eventually
Depends on the types of notes you're taking. I use https://logseq.com/ for longer form thoughts, Zettlekasten, as well as daily journaling, but use https://todoist.com/ for my daily to-dos, task inbox, and prioritisation.
The reality is though that where you take notes doesn't matter so long as you're consistent (i.e. choose something that fits into your existing workflows) and you know how to take notes that are actually effective (this is a real skill many people don't have). I always recommend reading "How To Take Smart Notes" by Sonke Ahrens as a great starting point.
For complex note taking that requires a lot of link/brainwork I like to use Obsidian https://obsidian.md, free, works great with markdown, can handle everything you throw at it, can make complex links and structures and you can host ist everywhere per markdown. Github, Dropbox... you name it.
For easy note taking, scribbling something down I use Notion.
I take many notes (also for academic research) and I have been using the free and open-source TiddlyWiki for many years.
It needs to be self-hosted; it's just a single HTML file, so very easy to set up.
It follows a (decentralized) Zettelkasten-system.
