I'm doing a research regarding pricing plans for uptime monitoring service. I thought that most indie hackers have like 1-2 sites, but looks like it's not truth.

Depends how you define "have". As in ones that are directly linked to me or my work - 2 or 3. Sites that I manage (hosting, domains, etc) for friends and family. Dozens.

In that case, practically none. 3/3 of my personal are hosted on github, the rest are on gcp and gcp's monitoring is sufficient for me.
this right there means probably you need to define the question better otherwise you might be gathering the wrong user feedback @Akcium
I have one which is a landing page hosted and maintained completely by me (I use a Bootstrap template) and two hosted on Carrd.

I think IH users excluded, normal people would have 1-2 sites maximum, if they have any, so go for that in your pricing :). Then 3-6 (you can put that as an added offer, since it is surprisingly number one), but I assure you most of your users would use the 1-2 sites package.

Fortunately most of my hosting costs are virtually zero because I use JAMStack + free static hosts like Netlify.
The exception is bookfirstact.com which is currently being migrated from Squarespace to a more affordable option.

For those of you with more than a few websites, how do you mange the ongoing maintenance (if any) for each site? Do you work on one site for a day and then switch to another, do you multitask?

I bought many domains, most of them are not in active. I only care 1-2 for the uptime
