How much does Youtube & Twitch make and pay out?

Need some help to understand how much sites Youtube & Twitch pays out to each creators, and how do they calculate the amount to keep?

I know it may be complex and depend on a lot of factors, but what's a simple way to look at it?
For example, if a site like Youtube has 20 creators and people pay $5 / month to watch Youtube premium, how much of that $5 goes to the creators creating the content, and how much does Youtube keep?

How can this be calculated based on different factors, since each Youtuber, Twitcher or creator will be different.
