How to create a Landing page subscribe form

Hi IH community,
I'm currently preparing a landing page for my upcoming product to start getting some feedback and measure people interest.

I'm a pure desktop developer and I know only little in web development. To build the landing page with no coding I use https://8b.com which is great for me.

The only "problem" I have is for the subscription form which uses formoid service. As I understood, it means that all collected emails will be saved somewhere on formoid servers. What I'd like is have a form which sends me an email with "from" being precisely the subscriber's address.
In worst case I'd like to receive an email with the subscribe address in the body but avoid having my subscribers emails saved anywhere else than my inbox/contact list.

Could you give me some advice on which service I could use or a starting point if I need to code it myself :)
