Could anyone advise me the best way how to design functionality of an application?
I'm stuck with it, I know for example, that want to create some fitness application. I know on an abstract layer, what I want to see in it, but have troubles to draw it even on paper, prepare some mock screens, etc
For me, it's very difficult to understand how to prepare the user interaction scheme.
I mean I want to understand, how to prepare some kind of map of my application, for example - Home screen, next user clicks New Workout button, goes to Workout Screen, here will be the functionality...

It sounds like you might be trying to define function before you have figured out what the features are. You're not likely to make much progress as long as you are wanting to "create some fitness application." Try to step back and think about:
You could write it out like this...
As a <5k runner>, I want to be able to <find upcoming 5k races in my area> so that I can <register before the race is full>.
So, I know nothing about 5k races or participating in them, but just writing out that sentence gives me a structure and a thought process of what the racer might need to do in an app that i create. In this example, your primary feature is going to be <find race>. Now build an interaction around that. Then move on to the next story and keep going.

Well, as almost always divide and conquer to the rescue. First of all, forget about mocks. Grab a piece of paper and a pen, do a mind map of the flow. Then when you identify the main flow, screen by screen think about the mocks. The trick here is to avoid overwhelming and split the problem into smaller ones.
Well if you have no idea then look at a bunch of existing apps in that space for inspiration.
