My users will not test with me because of privacy concerns. However, whenever I will launch I will also have access to the same data.

Jasper, making your users feel safe may be out of your control, what is within your control is giving them the certainty that their data is safe by implementing proper measures and privacy protections. Tell them (or show them) the steps you have taken to ensure their data is safe.
If you are noticing this through analytics, you could design a suitable user experience to anticipate and prevent the drop-off by addressing user concerns around data privacy. Additionally, you could incentivize users to test by offering rewards or benefits.

I think you are completely right. The problem is that I am using the firebase backend. There is no way for me to have this data unavailable to me. I will never be able to change that.
What I can do is explain how the data is scattered and hardly readable through my own representation. I am also thinking about writing a privacy policy and giving that a high priority.
I am noticing this through my own interviews, not analytics per see.
