How to move from a larger concept to minimum viable product?

I have a concept that I would like to build. It's probably somewhat simple for others, but grand for someone like me. I took the time and created an outline that I really like, but find it hard to strip out parts to make an initial MVP. What are some steps you've taken to "trim the fat" but still ensure enough meats left for the initial lure in the launch?

    Make a list of all assumption. Put them according to your process flow. .

    Next select one assumption which is most important. It must be important because if that being proved wrong everything will fall apart.

    Next, think what can you do to test that assumption. Implement it.

    Next, repeat above steps for all assumption
