How to stay ahead of larger competitors?

Lets say you create a successful SaaS product. A larger company takes notice and decides to build a competitor product. With their larger pool of resources they're able to create a more featureful version and have the sales team to outsell yours. How would you deal with this scenario? Or is this something that doesn't really happen?
