How to stay motivated?
I've been having difficulty finishing a project that I started. Seems like it happens whenever I start any project.
How do you stay motivated on completing a project and seeing it thru?

I like to break things down into chunks so that I can feel and see myself making progress. I'm not very formal about it, but generally I feel good when I tick things off my imaginary todo list.

Stay curious. Talk to users. Launch Something.
Can't teach "curious". Are you curious about the problem you're solving? Are you curious to find people you can help?
When talking to potential users, they should lead you to the next feature or the next part of the build. And give yourself a week to bring back something to them. Anything. Use the mom test to get through great user interviews.
I also find myself losing confidence after a week or two. If I can finish a product and get it out launched and working shortly, much much more likely to see it through.
