I am not a developer but can afford to pay a full-stack developer to build it for me.
My concern is that it has too many features: course platform, subscription platform, membership platform, blog platform, and digital products platform.
Is it easy for 1 person to pull it off? I am afraid I may not be able to afford 2 developers and I don't want to spend money on something that won't be completed.

You could take a look at Google's course builder and it may help you get a jump start on the project. Is it easy? No, not really, not to do really good job.
You could also take a look at some of the no-code tools that are out there.
