I am a niche website hoarder too. I see little reason for NOT starting a new website. Actually, I see none. I have been a full-time introvert since forever, and product marketing happened to be my vocation and avocation.

In addition to Ezoic, the other well regarded ad networks are Mediavine and AdThrive. Though, each has different monthly traffic minimums.
Building direct, higher paying, affiliate partnerships is generally the holy-grail. Though I am curious as to how gross Amazon affiliate revenue would be impacted by sending traffic directly to the affiliate's website vs Amazon.
As you likely know, when you send traffic to Amazon via an affiliate link, even if that person doesn't buy the product you referred them to, there's a good chance they will be buying something else (on Amazon), and you may just get that commission. If you send them to the affiliate and they don't buy -- well, you lost the chance of any other affiliate commission. Interesting dilemma.
Monetizing niche websites is an interesting challenge. If I were to start another one, I may think more about the subject matter, and the potential for affiliate sales. If you write about diamonds or high end watches, there's a much more profitable affiliate opportunity than if you're writing about paperclips.
RPMs can largely differ too. For example, some men's style related websites may average $12-$15 RPM, where a cooking blog could yield $30-$40 RPM. I don't know if there are any articles that provide average RPM per category, but that would be interesting to know.

Yes, Mediavine and AdThrive are tops, but they require much more page views per month to be accepted (and this is not their only condition). Ezoic is great too. I am pretty sure that any additional ad platform will increase the evaluation of a website (at least you can diversify income).
You are right about the "diamonds" example, however, at least from my research, higher commissions are in harder to rank niches. Or in niches where you don't expect a high volume of sales, usually, high-end products.
I have a website in the outdoors niche (I report how I build it in a case study, I send monthly reports to my newsletter readers) so I wanted to monetize it with a higher paying affiliate program, however, many of them have additional requirements, which is usually high traffic. They don't want to deal with little blogs. I will apply again once the website gains more traction.
