Schools haven't closed here (yet) in the UK, but we've decided to take our kids out of nursery. We don't do school, but our 8 year has a few groups that he goes to, we're going to stop those too.
Our basic plan is to go to parks and for walks early in the morning when it is quiet. And for my husband and I to take turns looking after the younger ones during the day.

I think you're making the right call. Officials have refused to close schools here in NYC, and some teachers and parents seem on the verge of rioting** over it.
** While standing no fewer than six feet apart from their nearest mask-wearing co-rioter, of course. ;)

My kids are in high school, middle school and grade school so it's different for each. For the grade schoolers, the school has given them a schedule. They're going to do phys education and music over Zoom. For the older kids, it's largely self-guided and they haven't figured-out lectures or how to give focused help. I think the schools are handling it ok, but we haven't figured out how to manage the kids school time across the different skill levels and schedules of our kids. Does that make sense LOL?
I don't have kids but the morning walk is a great idea to work around cabin fever. More trees the better, I say! The Japanese call it forest bathing and some doctors prescribe it. :)
I have 2 kids and I'm in Malaga (Spain). Spain is basically closed for next 2 weeks and parks etc are off limits.
I bought clay (they were already in ceramics school) + book on how to improve drawing, extra pens and canvas etc.
My oldest has school assignments but in between I am creating an arts and crafts schedule.
My youngest will also have to train calligraphy - bought several pads for him to train.
I'm really glad to have my two year old at home with me these days in the UK. She is great fun to play with and it really takes my mind of this waking nightmare. My wife and I are planning to do the same thing as you. Go out at quiet times and avoid anywhere that we might bump into other people.
We're near Mt Rainier, outside Seattle. Our school district has officially closed. I feel lucky that they put together full online learning for all kids in the school district. We're still trying to figure out what our structure will be, since the kids have to do online school work each day.
I think that a guide is a phenomenal idea. I suggest section by age, and whether they are remote school or no school.
I'm totally in on this idea - happy to be a worker bee or help figure it out.
I'm curious to know how the online learning works. Do you have insight into that?

If your kids are young and you’ve got an easily cleanable floor, there’s loads you can do with a tough tray (messy play)
For the adults: I think setting dedicated spaces up that you can go to for a quiet time out will be helpful. Everything is made easier when the adults are taking care of themselves too.

we took our 3 kids out of their "systems" weeks ago, way ahead of what San Francisco USD was telling us (United School Districts).

we have a daily family calendar that works and that we're now adding specific
covid-19-centric ideas....but, we take daily walks into the canyon a block away (which is fantastic). its' how we're getting exercise and fresh air, but, we avoid it during the weekends because...
lots of people.we're still building our systems. and we're trying to make it fun.
a new reality is upon us... and now we have to (re)build their world(s).
parenting... never stops.
