If I have a landing page up and I'm driving traffic to it from different sources (BetaList, blog, FB ads, etc) and there are no conversions, how bad of a sign is that?
Has anyone started a SaaS product that is now successful but had no luck converting beta users in the beginning?
How many visitors are coming to the page? Can you share the page? Have you tried different landing page designs?
I agree here. You tried one landing page, you should think about how to measure if it’s successful or not and adjust accordingly. There’s a ton of factors, maybe your audience, problem, product, messaging or vision is unclear.
TLDR; keep on trying and make sure to measure what you’re trying.

If you have no beta users at all, and this landing page is the only way you're trying to get them, then yes, you have a big problem.
The solution is not to blindly tweak your landing page until it converts. You need to actually talk to some potential users to figure out what's happening. You may be targeting the wrong people. You may be solving something that they don't actually see as a problem. You may be describing your offering in a way that doesn't make sense to them. You're never going to figure that out by tweaking the landing page.
If you do have beta users from other sources, talk to them about what value they're getting from the product and ask them to critique the landing page/suggest improvements.
I guess it depends on "who" exactly coming to your page.
If you have a product for bold men, and you (somehow) keep attracting women that have no hair problems whatsoever, you are reaching out to a wrong audience.
so I would first double check: am I really attracting the audience I am targeting?
to be able to do that, you need to know, what problem you are solving for whom, very clearly.
if those are all clear and fine and working, and you are still not converting, then either the problem does not exist, or your targeted audience does not have that problem.
then I would go back to square 1, find the right audience, find their problem, and offer a solution to that problem in my landing page.
