This is likely a "heavier" version of an MVP than normal but I want a project to add to my portfolio that shows the complete process.

Research > Insight > Design > Test.

You'll be a particularly good fit if the users are Back Office/Operations or Sales/Marketing folks.

Tools for Developers, Product, HR, Productivity, Collaboration are less ideal.
